ART of Cooking

Dear Reader/Chef/Diner/Gourmand/Art Lover--

All of those roles will be possible for you as you enjoy the ART OF HEALTHY
COOKING. This joint accomplishment from the Medical University Women's
Club, Heart Health and Health 1st serves MUSC and provides continuing
scholarship funds for outstanding students in our six colleges. As you
peruse this book, you will see that it's not just the need to provide fuel for
the body and maintain wellness that motivates people to eat. As Anthelme
Brillat-Savarin said: "Tell me what you eat, I'll tell you who you are." With
the ART OF HEALTHY COOKING, if you tell us what you want to be, you will
discover how to eat.


Theodore Dreiser once observed that: "Art is the stored honey of the
human soul, gathered on wings of misery and travail."
It is easy to see
that Art plays an important role in this book. It is a tribute to Ashley River
Tower (ART - emphasizing cardiovascular and digestive health) and the
philosophy that healing is possible only through the perfect balance of
body, mind, and spirit. Art evokes calm, creative and inspirational feelings
that can improve attitudes and perceptions about wellness. The presence
of art in hospitals has been shown to reduce the lengths of patient stays
and to help relieve stress for patients, staff members and visitors. We are
fortunate that many of the 54 South Carolina artists who have 873 original
works displayed in ART have allowed us to illustrate some of their works in
the ART OF HEALTHY COOKING.


We believe that people who dine best combine art, love, and the finest and
freshest ingredients to produce a perfectly satisfying meal. You will find the
ART OF HEALTHY COOKING a great tool for transforming any recipe into a
meal that is nutritionally optimum, satisfying, and delicious. We particularly
appreciate that this cookbook contains a special section for those
with allergies or who are gluten-free. As you read this book, you will be
tempted to cook, eat, appreciate, and also take a trip to Ashley River Tower
to see its beautiful artwork in person - fulfilling all the roles the ART OF
